The best way to see a destination is often by setting off on foot. I am that proverbial person that says, “We can walk it.” Don’t know what to do with the day, then start walking. I find you stumble upon some of the most significant discoveries when you take to the pavement or the off-beaten path. It is a fabulous learning experience with discoveries around every bend.

Australia has plenty of walks to discover. Or hikes if you are in for a bit more workout. I’ve climbed an array of gorges, canyons, and more! I’ve had the thrill of experiencing a climb up Peak’s Passage on Hamilton Island, trekking around King’s Canyon Rim, and scurrying down the hillsides in the Blue Mountains to witness cascading falls. No matter your state or territory, you will find somewhere unique to explore on foot.

Australia makes it even easier to Walk it Out.

Australia has what is known as the Great Walks of Australia. For the fitness buff, nature buff, and explorer, these are a variety of walks throughout the regions and in varying degrees of difficulty. Some are multiple days, and some you can do only part of. No matter your choice you need to try one.

Here is a list of the Great Walks:

  • The Arkaba Walk– Located in South Australia, is a 4-day walk of moderate intensity traversing the Flinders Ranges. It is best done from March to October.
  • Murray River Walk-Located in South Australia, is a 4-day walk rated easy that takes along one of Australia’s greatest rivers. It is best explored from May to September.
  • Bay of Fires Lodge Walk-Located in Tasmania, is a 4-day walk of moderate intensity as you explore the northeastern part of Tasmania along Mt. William National Park. It is best done from October to May.
  • Cradle Mountains Hut Walk-Located in Tasmania, is a 6-day walk rated moderate to hard discovering World Heritage areas along the famous Overland Track. It is best experienced from October to May.
  • Freycinet Experience Walk-Located in Tasmania, is a 4-day walk of moderate level. This walk will take you through the pink granite Hazard Mountains, and you will see the famed Wine Glass Bay. This walk is best done from October to April.
  • The Maria Island Walk-Located in Tasmania, is a 4-day walk with an easy to moderate rating. Explore eucalyptus forests and spot amazing wildlife on this trek. Plan this walk for October to April.
  • Three Capes Lodge Walk-Located in Tasmania, is a 4-day walk of moderate level open year round. It is fully guided and walks along the Tasman Peninsula.
  • Scenic Rim Trail-Located in Queensland, is a 4-day walk rated moderate to hard. It is accessed from Brisbane and explores South East Queensland’s Main Range Park. It is best done from February to November.
  • Twelve Apostles Lodge Walk-Located in Victoria, is a 4-day walk of moderate level. It explores the famed Great Ocean Road. It is best experienced from September to May.
  • Cape to Cape Walk-Located in Western Australia, is a 4-day walk of moderate intensity exploring the landscapes along the Margaret River. Plan this walk from March to June and September to November.
  • Classic Larapinta Trek in Comfort-Located in the Northern Territory, is a 6-day walk listed as moderate to hard. It will take you along the high ridge lines of the MacDonnell Ranges. This walk is best done from April to September.
  • Seven Peaks Walk-Located in New South Wales, is a 5-day walk. It is rated moderate to hard with options. This walk takes place on Lord Howe Island, a Unesco World Heritage listing. Operational months for this walk are April and May, and September thru November.

5 Reasons to Visit Australia

When polled, do you know which destination travelers always put at the top for their dream vacation spot? You guessed it, Australia. Australia continues to be on everyone’s wish list. Now more than ever, travelers are ready to make those big trips! Australia has an endless list of reasons to make that trip “Down Under,” from its beauty to the people. Let me surmise it with a simple top five list in no specific order. As you know, I could write pages about all the reasons I love this destination. 

5 Reasons to Visit Australia

  1. Wildlife. Australia has some of the most unique and unusual nature. Much of their wildlife is only native to Australia. This is because years ago when the earth plates separated, it left Australia an island nation. You have animals such as the koala, the kangaroo, the wombat, the echidna, the Tasmanian devil, the quokka, and so many more. And don’t forget the sea life. You have the incredible opportunity to experience many of them up close in their own habitat. No matter which animal has your fancy, you are bound to have an experience you will never forget. 
  2. Wine and Food. With Australia boasting over 65 wine regions, it is no wonder it is a wine and culinary sensation. Australia has a variety of influences in its cuisine depending on the region you are visiting. You will find more Greek influence in, say, Melbourne, while if visiting the top end, you will find more Asian influences. Top chefs abound, and there are plenty of experiences for the ever-popular farm or sea to table for travelers to fancy their taste buds.  
  3. Coastlines. Being an island nation, Australia has more beaches than you could ever visit in a year. In fact, they have over 10,000 beaches. With so much coastline, water activities are abundant. Learn to surf, sail the seas, swim with sharks, whatever your heart desires. Surf, sand, and sun in every state and territory make it an ideal vacation spot any time of year.
  4. Culture. Australia has the oldest indigenous culture. Aboriginals have been on the lands for no less than 60,000 years. Learn their ancient ways and discover how they use the land. In addition, Australia is a wealth of art, music, and sports. Visit during the festival season for an extra spectacular experience. 
  5. The People. Yes, they have that lovely accent and sometimes unusual slang, but for the most part, they speak English. I know this can be a draw for those not as well-traveled to have that bit of comfort when abroad. But better than understanding them is enjoying their fantastic outlook on life. They are extremely friendly and laid back. The colloquial “No worries” is precisely that.

The Winter Road Trip Short Checklist

I am no stranger to winter or winter road conditions. While many of you know me from my years in Tennessee when I began my travel career, I have as much if not more of my life spent in the north. I have lived in Wisconsin on four different periods of my life, including my driving development years and living in Vermont three different periods. And of course, now I reside here in New Jersey, where we just had a lovely dumping of the white stuff from the most recent Nor’easter.

With many of us still sticking close to home and hitting the roads for our vacations, it is an excellent time to share some of the items I keep in my car to be road-ready. I’ve created a shortlist of things you will typically find in my car during the winter months or when I make a winter road trip. I like to ski and visit the mountains, not to mention I will use any excuse to hit the roads for travel. 

Winter Road Trip Short Checklist

  • A blanket. I keep a blanket in my car year-round. In the winter, it is there for warmth should you end up stranded on the side of the road. In the summer, it is a beach blanket or park blanket.
  • A shovel. I have a collapsable shovel that I throw into the car when the cold months arrive. It comes in handy if you have to dig yourself out unexpectedly. 
  • A bottle of wiper fluid. Be sure to get the wiper fluid that is good for at least -20 degrees below zero. Regular wiper fluid will freeze up in the spouts.
  • A bag/box of cat litter.   Cat litter works great for providing some traction if your wheels are spinning. The extra weight of the bag or box is good for keeping the tail end of the car swishing. The extra weight grounds the car better.
  • A bottle of water. I always have my water bottle with me. Again, if, for some reason, you are off the road waiting for some assistance, you can remain hydrated. 
  • A roll of paper towels. Paper towels can serve many purposes, from cleaning up messes, wiping your nose, or even wiping your ass. Having had three kids and multiple pets in the cars over the years, finding paper towels rolling around in the back is pretty standard year-round. 
  • A snack. Anyone who knows me well knows I usually have something in the bottom of my purse. I am one of those hangry people. However, traveling during winter, this snack may need to be your meal until help arrives. 
  • Jumper cables.   I have a set that has its own power source. I don’t need another vehicle, but I need to make sure I have fully charged them before traveling. 

Those are my winter car kit basics. And I must admit I am not always good about remembering to keep it stocked on regular road days even though I should because traveling the parkway to work here can be just as dangerous as taking a road trip to the mountains in Vermont. Share with us some of the things you have in your emergency kit. I know there are a few other things that I should include, but this is a good start for anyone looking to hit the winter roads.

Passport for Your Palate-“Garbage” Fried Rice

Fried rice has to be one of my favorite go-to recipes. It is perfect to use leftovers, especially after large holiday meals. I always whip up a batch around then, but it works so well anytime you have foods to use up from your refrigerator, thus the name “Garbage” Fried Rice.  

While my standard fried rice always has bacon, egg, green onion, and typically peas and carrots, you will find almost any protein or combination of vegetables in it at any given sitting. I do a lot of meal planning, so I throw this recipe in near the end of the week to use up any remaining items in the fridge. 

“Garbage” Fried Rice

Ingredients:

  • 2 cups rice
  • 4 cups water
  • 4 slices bacon, chopped
  • 3 eggs
  • vegetable oil, if needed
  • 1/4 teaspoon pepper
  • 2 teaspoons minced fresh ginger. You can substitute powdered ginger. Only use about a 1/4 tsp if using powdered. 
  • 8 green onion or about 1/2 regular onion
  • Veggies, chopped into small bite-size pieces. The photo has carrots, celery, cauliflower, and peppers. 
  • 8-16 ounces protein, again whatever your leftover meat is. In the image, I used chicken.
  • 1/4 cup soy sauce. I eyeball this based on the color the rice turns. 

Instructions:

  1. Cook rice in the steamer. Typically the rice will be one cup dry to two cups of water placed in the steamer. 
  2. Cook the bacon in a wok or large skillet. Stirring often and until crisp. Remove bacon and reserve drippings from wok.
  3. Whisk the eggs and pepper in a small pyrex measuring cup. 
  4. Add a bit of the reserved drippings to the wok. Pour 1/3 of the egg mixture into the wok. Tilt pan, so it covers the bottom. Do this over medium-high heat until the egg is set. Remove egg “pancake” to cutting board. Repeat process twice more. If you don’t have enough reserved bacon fat to add about 1/2 tablespoon for each egg, substitute vegetable oil. Chop up the cooked eggs on the cutting board and reserve for later. 
  5. Heat another 2 tablespoons of bacon grease or vegetable oil over medium-high heat. Add the ginger and stir-fry for 1 minute. Add rice, cook, and stir for 5 minutes. Stir in your veggies, protein, eggs, bacon, onion. I add one at a time, adding the one that needs the most cooking or heating back up first. When all items are mixed in, finish with adding the soy sauce. Cook and stir until heated through.
  6. Serve.

Makes roughly 8 servings.

My Favorite Holiday Traditions

As the year winds down, I feel somewhat nostalgic this year. I believe it comes from being so thankful to be here writing and booking travel after what seems like an eternity of trials. However, that is precisely it; we can always keep our spirit no matter the challenges. December for me is always a rollercoaster month of emotions, but when I think and prepare for the holiday, it brings me joy. I thought it would be fun to share some of my favorite holiday traditions. While not all of them happen every year now, especially with the kids all grown up and the family spread across the states, they still bring joy to me. You may practice some of them yourself. I hope thinking of them brings a smile to your face.

My Favorite Holiday Traditions

  • Cutting a Christmas Tree.  I haven’t done this one in years, but oh, the memories of bundling up and going to go pick out what I always felt was the grandest tree. Over the years, I lived in many homes with Cathedral ceilings allowing us to get a huge and very tall tree. But what I love most, its the smell. 
  • Watching the Sound of Music.  My favorite movie. Every December, it has become a tradition for mom and daughter to watch. And of course, you can not watch it without singing along. I was fortunate to see a theater version with a good friend one year. And probably one of the best family trips ever was a trip to Germany and Austria that included the Sound of Music tour. 
  • Hanging Christmas Stockings. To this day, my kids still find the stockings to be the best part of Christmas. We open them last. I fill them each year with the same treats. I fill them with such things as toothbrushes, floss, gum, nuts, chocolate, hard candy, chapstick, and more. 
  • Opening One Gift on Christmas Eve. After returning from Midnight Mass, it has always been a tradition to open one gift before heading to bed. Oddly enough, this one gift always managed to be pajamas. Insert winky face. Today, my adult kids still look to open that one gift. 
  • Attending Midnight Mass. While it can be a struggle to stay up, I believe this is the most beautiful and heartfelt of the Christmas masses. It just seems a bit more magical when you leave and see the stars in the sky. After all, it is the reason for the season. 

I am sure there are more I could share, but as the song says, “these are a few of my favorite things.” I would love to know if your family shares any of our traditions or what others you might have to share. The greatest gift about working in travel and living all over is discovering other cultures. Learning what is the same and trying something new.

What better way is there to find the hidden world with all its magic than to travel together with your significant other. Whether you are dating, engaged, or married, you should be traveling together. Traveling together is not only fun and a great time to try new things, but travel provides some great building blocks for couples. I’ve heard it said, a couple who travels together stays together.” Here is what travel can do for you.

5 Reasons Why Couples Should Travel Together

Strengthen your bond. Traveling together gives you time to strengthen the relationship as you face challenges. An opportunity to build and grow trust in the relationship. A time where there are no outside forces of daily life to pull you away from concentrating on each other.

Discover more about each other. Now is a perfect time to see one another’s true colors, reactions to change, and stress management skills. Are they able to let loose and enjoy, or are they fit to be tied? Learn something maybe you didn’t know as far as a like or dislike or even a future dream.

Learn to compromise. As you discover each other’s styles, likes, dislikes, you will learn to compromise. Quite often, in a couple, one is the daredevil, and one is not. You may have different visions of what relaxing means. Through travel, you will learn to sort through the differences and select destinations and activities that appeal to both of you.

Make memories. Travel will create stories and make you storytellers. You will have moments to share deep into your relationship. “Remember when we….” And be sure to capture those personal photos and pictures to go along with the many adventures.

Rekindle the romance. Traveling together definitely provides an opportunity to keep the sparks alive. We all need, and I think even more so when we are in a relationship that, time to disconnect from the hustle and bustle to become human again. Whether you go near or far, time spent away as a couple for a weekend, week, month allows you time to reconnect and remember why you first came together.

Want to liven things up and have a less boring relationship, then make time for travel as a couple. Not only does it do all the things above, but it is safer, can be less money than single travel, creates quality time, and is double the fun!

3 Reasons to Visit the Shore in September

Everyone thinks of going to the beach during the summer months of June, July, and August, but they are missing out on one of the best months, which is September.  September itself is such a beautiful month. Many forget that school starting that summer doesn’t technically end until the twenty-first of the month. I make it a point to visit the shore each September around my birthday. It is a perfect time for me to refuel, even if it is only a few days.  So, let me share just a few reasons why you should plan a visit to the shore in September.

3 Reasons to Vist the Shore in September

  • September is indeed beautiful. The days will often be quite warm in the upper seventies to lower eighties without all the humidity. There is more breeze, and the angle of the sun is less intense.
  • The crowds are gone.  Most tourists have returned home at this point. Finding a spot on the beach is not a problem. You will probably have most of it to yourself. The same goes for parking and even finding a rental.
  • The cost has gone down. In September, you no longer have to have a pass to go on the beach.  In New Jersey, and I know in other US locations, you typically have to purchase a pass or pay for parking to access the beach. These costs go away after Labor Day.

Passport for Your Palate-Heuvos Rancheros

Bring the hearty taste of Heuvos Rancheros to your breakfast table.

On a recent visit to Austin, Texas, I ordered one of my go-to Mexican dishes at this great little diner, Joann’s Fine Foods, Heuvos Rancheros. Heuvos Rancheros or Ranch Eggs was a breakfast dish created for the work hands on the ranches in Mexico. After hitting the land early, the workers would be ready for another meal or a second breakfast by 11 am. It consists of eggs done any style, tomato salsa sauce, refried beans (you can serve this in paste consistency or leave the beans more whole), tortillas (flour or corn), and avocado or guacamole. It is a hearty dish making it perfect for a late breakfast or brunch on the weekends. 

It is pretty simple to replicate at home. The key is the salsa or sauce you serve over the eggs and can sop up with your tortillas. It tastes best if created with fresh ingredients, but you can speed preparation using canned or prepared ingredients as substitutes. They come in handy, especially when items might not be in season. It is one of those dishes I like to try when visiting a new Mexican restaurant for comparison.

How to Make Heuvos Rancheros

Ingredients:

2 brown eggs or farm fresh

1 cup refried beans or canned beans

2-3 corn or flour tortillas, warmed

1/2 avocado sliced or 1/4 cup mashed into simple guacamole (optional)

Queso Fresco (optional)

Cilantro (optional)

For sauce:

1 medium jalapeno chile

2 large vine-ripened tomatoes

1 medium-sized white onion 

3 large garlic cloves

1/2 teaspoon ground cumin

1/2 teaspoon oregano (Mexican oregano if you have it)

1/4 cup water

Pinch Pink Himalayan Sea Salt 

1 teaspoon olive oil 

To make the sauce/salsa:

You want to roast or blister your vegetables. You can do this over a flame on the grill or under a broiler. Char the chile and tomatoes until blistered all over. You can then let them cool in a brown paper bag. Peel, seed, devein and chop the tomatoes. The jalapeno can be chopped with seeds or remove seeds for less heat. 

The garlic and onion can be pan-roasted and then minced and chopped, respectively. The roasting and blistering is the real kicker here. I do this with a lot of my salsa and even the ingredients I use in my guacamole. 

In a bowl, mix your roasted ingredients with the remaining sauce ingredients. Warm it or serve at room temperature. Makes roughly 2 1/2 cups. Set aside.

Now that your tomato salsa is ready, you can prepare your eggs and other accompaniments. I like to have mine over easy.  

To plate. You can either use the tortillas as a base or serve on the side for wiping up the fantastic combinations. Place the two eggs on the plate or top the tortillas. Pour salsa over the eggs leaving the middle yolk area visible. Place the beans and avocado on the plate alongside the eggs. Garnish with Queso Fresco and fresh cilantro. You can add sides such as hashbrowns, chorizo, or bacon to make it even heartier. 

To quicken things up, I would use canned tomatoes with chile or add canned chopped jalapeno to the canned tomatoes. After roasting them, I would still use my chopped onion and garlic and add the tomatoes with chile right into the pan—warm through and season with the cumin, oregano, and salt.

Passport for Your Palate-Avocado Toast

Where did Avocado Toast come from?

If you look up the history of avocado toast, you will see various claims from Sydney to New York and a few places in between, saying they were the first to bring this Instagram sensation to the table. There are even notes pointing to the origin in Mexico, where the growth of avocados is most known for and started as avocado on a tortilla. No matter where this creation began, which we can assume was more than a century ago; the delicacy has become a favorite worldwide. I often order it from the menu and certainly duplicate it at home. In fact, it is one of my youngest daughter’s daily routines to begin her day with avocado toast. 

Avocado toast can is either with a mash or sliced bits of this smooth, creamy fruit. It may have eggs on top or stand on its own. It can be fancy with additional details of seeds, sprouts, truffles, and so much more. There doesn’t seem to be a wrong way to enjoy it. 

At home, we like to make it with a mash and add the eggs. I know I will always have these basics on hand, and when I go out, I sample all the incredible chef creations. I recently had an avocado toast in Austin, Texas, that had sprouts and pepitas with goat cheese topped with eggs over easy. The toast pictured was eaten in Washington, D.C., and used quail eggs and truffles. I’ve eaten it in Europe and of course my beloved Australia. Today, I will share our simple, quick take that will have you seated and eating in minutes. 

How to Make Avocado Toast

Ingredients:

1 small to medium ripe avocado

1-2 slices of bread. We use gluten-free due to my daughter’s dietary needs, but your favorite bread will do. I prefer thick multi-grain bread with seeds in it. 

1-2 large brown organic eggs. If you have fresh from the farm eggs, that is even better. 

Coarse ground black pepper

Pink Himalayan Sea Salt

Lemon Olive Oil. We use California Meyer Lemon Olive Oil.

Directions:

  1. Bring a small pot of water to boil. Add the eggs and cook for 5 minutes. You can opt to poach or fry, but we like a quick, easy, soft boil. Run under cool water and set aside. 
  2. Cut the avocado in half. Remove the pit and scoop out one-half of the avocado into a small bowl. Mash the avocado with the back of the fork or an avocado masher—season with sea salt and pepper.  
  3. Toast your bread. While bread is toasting, gently peel your eggs. 
  4. Spread toast with your mash. Drizzle lightly with some of the lemon oil. Place egg on top of toast and cut the egg in half to expose the yolk. Hopefully, it is nice and runny. 
  5. Season with additional salt or pepper as desired. Or add some of your other favorite seasonings, such as hot red pepper flakes or seeds. 

Enjoy! It serves 1 to 2 depending on how much you want to indulge.

Personal Review-Kimpton Hotel Van Zandt

I had the fun of making a quick trip to Austin, Texas for, a long weekend. The hotel pick, Kimpton Hotel Van Zandt. One of the draws to this was the architecture with light fixtures made from musical instruments throughout the property. A visit to their website will do better picture justice than I could do. The hotel had many other things I look for, from views to dining, to the amenities.


Here is a breakdown of my take on the Kimpton Hotel Van Zandt.

Location-Located in what is known as the Rainey district is not far from the live music venues. One could easily walk to catch the entertainment from within the hotel to as close as across the street. It was an easy walk if you chose to go downtown or get there even more quickly with a Lyft or Uber. 

Rooms-It is a 16-floor hotel offering a variety of room types. I can recommend you choose one of the lake view room categories. I thoroughly enjoyed sitting at the large window looking out over the water and cityscape while enjoying a glass of champagne. The bedding was comfortable, plenty of dresser and storage space for unpacking, and a nice large bathroom with two sinks. There was a refrigerator and robes. Room service is available during select hours from Geraldine’s. Not necessarily issues, but oddities were there was no coffee maker, and the shower design was a half glass vertical partition. 

Amenities-Hotel had two dining options, live music, rooftop pool with a bar, almost making it unnecessary to leave. I enjoyed Cafe 65 daily for my morning cup of tea, hit The Pool Deck several times, and ate at Geraldine’s one night to not only enjoy the cuisine but the live music. The whole place had a great vibe, and everyone seemed to be enjoying themselves to the fullest. Be sure to make reservations at Geraldine’s and for most fine dining if you want to go somewhere specific. For the pool, like most anything, you need to be the early bird to catch the worm. Lounge chairs and those with umbrellas are limited. I suggest getting down by 11 am. The pool does have the option of cabana rentals which seemed to be very popular with some birthday and wedding guests. The hotel did have a gym which I did not make it to, and bikes for exploring.

On the whole, I enjoyed this hotel. I would recommend it for most travelers looking for a stay in Austin, TX. And to top off, the great feel of this place was the friendly staff. It was a real show of southern hospitality from the doorman to the concierge, the barista, and the poolside waitress. There wasn’t a single person that didn’t serve with a smile and upbeat attitude. I certainly would consider staying here again.
